Varnaise discovered Yuzu during a research trip to Japan.

Varnaise says every one of his chocolates tells a story and imbibes the consumer with strong impressions of places to discover. The ingredients are fragments of his own memory of the places he has visited, the moments he has lived, and the stories he has read.

Yuzu chocolatier Nicolas Varnaise said, "In a country with a lot of chocolate stores and with a long and old tradition of chocolate you have to find a niche where you can fit in and how do you do that? By being a little different. And today we surf a bit on the wave of the new dessert cuisine."

Varnaise discovered Yuzu during a research trip to Japan. He said the chocolate he made with the Asian fruit quickly became his favorite and decided he would use it as the name for his new shop.

He says it perfectly represented the symbol of the store itself, a marriage between Japanese flavors and Belgian chocolate. Varnaise sells a large selection of Japanese teas in his shop as well as chocolate.
